Light N Easy recipe
i felt comfortable travelling in the wee hours when most people are still snoring zzzzzzz.You dun have heavy traffic like the day hours. Traveling in the early mornings works up an appetite. So to prepare for the growling of the tummy from your co travelers especially if they are your kids, I prefer not to please them with commercial snacks which usually makes you feel thirsty. I would like to share a simple recipe that is easy to prepare and nutritious too. Tuna sandwiches is usually what comes to mind but how about mashed potatoes with mayonise or salad dressing. Similarly the ingredients can also go well with mashed hard boiled eggs instead of potatoes. Well here is a simple recipe that you can try. Believe me it sure taste good.
Mashed Potatoes 3-4 Russet potatoes -smoothly mashed 2 - 3 tbs mayonise 1 tsp mustard 1/2 cup carrot cut to fine cubes 1/2 cup finely chopped fresh mint leaves 1 big onions finely chopped Sprinkle of salt and pepper Handful of lightly toasted almond chips
Method Mixed mayonise ,mustard and a sprinkle of salt evenly Follows by the cut carrot,mint leaves and onions Finally mashed potatoes and almond chips Spread the fillings on the bread. |
